Recipe: Apple Ginger Oat Cookies + GrandFusion

These cookies are chewy and packed full of oats and apples. Kids and adults love them so much they will want them in their lunchbox every day. Check out the recipe below.

Ingredients

1/2 cup rolled oats

1/2 cup all-purpose flour

1/4 cup oat flour

1 1/2 teaspoons baking powder

1 teaspoons ground cinnamon

1 1/2 teaspoons GrandFusion fruit and vegetable powder

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup maple syrup

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 cup Granny Smith apple, peeled and diced

2 tablespoons crystallized ginger, diced small (optional)

Directions

  1. Line a baking sheet with parchment paper
  2. In a bowl, combine the dry ingredients (oats, all-purpose flour, oat flour, baking powder, ground cinnamon, ground ginger, and salt)
  3. In another bowl, mix wet ingredients (maple syrup, melted butter, and vanilla extract)
  4. Pour the wet ingredients into the dry and mix until everything is combined but do not overmix
  5. Stir in apples and crystallized ginger
  6. Let the batter sit for 10-15 minutes while preheating oven to 325°F. The oats will soak up the liquid and make for chewy cookies :)
  7. Spoon batter onto the baking sheet on heaping tablespoon at a time, then bake in oven for 12-15 minutes (lightly browned around the edges)
